A Flipping Good Pancake Day!

I defy anyone who does not love flipping a good pancake!
There is something so childlike, yet so satisfactory when you complete that perfect flip!
(Or of course the dread and disappointment if it flops to the floor...)
Regardless, Pancake Day is one of my favourite days of the year; you have an excuse to gorge on fluffy cakes smothered in Nutella, fruit or syrup before the testing 40 days and 40 nights.




Time to get whisking, flipping and stacking!

I used a Nigella Lawson classic which enabled you to store a dry mix in the cupboard, ready for those urgent, fluffy cravings!
In a large bowl, simply mix:
- 600g plain flour
- 3 tablespoons baking powder
- 2 teaspoons bicarbonate of soda
- 1 teaspoon salt
- 40g (golden) caster sugar


I  used the whole of this dry mix in one go as I was making a truly epic stack for 6 of us, but if not simply pop it into a jar for storage.
For every 150g of this dry mix, whisk in 1 egg, 250ml milk, 1 tsp vanilla extract and a large knob of melted better.




It could not be quicker or simpler!

Before I put on my pancakes, I decided to whip up some rapid blueberry syrup to lather over the little feathery beauties. In a saucepan, pop in around 200g of blueberries with 5-6 tablespoons of golden syrup. Let this heat up, bubble for a few minutes, then take off the heat and let the fruit reduce.


Meanwhile, heat up your frying pan and ladle a big, old spoonful of your batter into the pan.


As soon as it looks relatively set around the edges and bubbles are popping through, whack out a spatula and have a good flip. (I managed 3 spins in the air- good luck topping that!)


I also found this little heart mould, perfect for Valentines day if you fancy making the pancakes just a smidge more romantic for that special someone!
Pop the done pancakes in the oven at a low heat to keep warm, carry on flipping and slowly watch your stack rise!



Smother them with blueberry syrup, lemon and sugar, Nutella, bananas... The list goes on!!
I plumped for the blueberry syrup hearts- (A good 3 or 4...), followed by the classic Nutella and Banana; unbeatable!!



A scrapbook moment right here: Celine's first every pancake, (shocking I know!). Our darling Frenchie has only ever had their classic 'crepes', alas no more! She's already addicted to Nutella so without an ounce of protest was quickly converted.


Brad saved us all, he has an endless appetite! I ate, a quite impressive, 6 of the steaming stack; yet without this strawberry blond chum to clear the plates, I reckon we would have all died from a delicious food coma!

So after gorging ourselves and completely demolishing the epic pancake stack, the food comas began to settle in. We ended up playing a ridiculously competitive game of Monopoly for a couple of hours before sneaking off to bed to collapse. I woke up this morning, still full from that epic stack, ready to start Lent... This is going to be one long 40 days and 40 nights!
I'm definitely giving up chocolate, but I want to test my will power too! It's time to be brave and cut the tie, I'm going to try and resist cake for as long as possible. For a baker, this is going to be killer, but good for the thighs!
(But I'm being naughty and starting Monday... too much birthday cake for me to eat tomorrow first!- I know my priorities!)

    January detox/health drive is less than fun - I just wana stuff my face with these beauties
    Also, LOVE the idea of a permanent 'dry mix' on hand for those low days
