The "Corr Blimey" Cake


This cake is a beast.
A chocolatey, summer berry beast.
The reason I have named it the "Corr Blimey" Cake is because that is exactly the reaction it receives.
Mouths drop, a hush goes around the room, and people think that you are some sort of magical cake wizard!



Looks wise? I'd give it a strong 9/10. She is a beaut!
And what is more... While some people believe that it just can not be anything but a professional, bought bake... THEY ARE WRONG!
The "Corr Blimey" Cake is not only one of the simplest cakes to make, but it has a guaranteed wow factor!
Not a natural domestic goddess?
Well do not fret, this bake will save your bacon when you need a statement to prove your critics wrong!



I owe Lorraine Pascale for the inspiration. I tweaked her recipe a bit here and there and it is a winner! 

To make your own you will need:
- 200g caster sugar
- 200g softened butter
- 4 eggs
- 140g plain flour
- 40g cocoa powder
- 100g melted chocolate
- pinch of salt
- 2 tsp baking powder
- 150g raspberries

For the buttercream and decoration:
- Around 80 chocolate fingers (2 1/2 packs usually)
- 250g softened butter
- 500g icing sugar
- 200g good quality chocolate ( I used milk)
- Strawberries and Raspberries to decorate

Line and grease a deep 20cm/8in cake tin and preheat the oven to 180C/160 fan.


Beat together with an electricwhisk the butter and sugar until pale and smooth.


Add half of the flour and eggs and beat well.


Add the other half of the eggs and flour, then the cocoa powder, salt, and baking powder.


Melt your 100g of chocolate and mix it in to your batter-y bliss!



Pour into the deep cake tin and bake for 30-40 minutes until it springs back at your touch and a skewer comes out clean.
Once completely cooled, half your cake using a large knife to have an even top and bottom.


To make the butter cream, mix the butter and icing sugar until smooth and creamy. 


Melt your 200g of chocolate and combine with the butter cream.



Taste testing here is compulsory, just to make sure it isn't poisoned, toxic, or harmful at all....!


Plop a large dollop of chocolate butter cream into the centre of the cake and smother to the far edges. Tip the 150g of raspberries sporadically on top.



First, sandwich this bottom with the top layer and then start covering the whole cake with a layer of butter cream with a spatula/palette knife. 



After one layer is applied, pop this into the fridge for 10 minutes to harden, and then apply a second layer.



Now it is time to get decorative!



I would buy 3 boxes of chocolate fingers as I found at least half of a box mysteriously disappeared...Strange.
Around the outside carefully line the chocolate fingers up like soldiers, pushing them to stick gently into the butter cream.



All the fingers standing to attention like soldiers!



Chop up some strawberries and carefully pile these and the raspberries into the centre of the cake.



And now my friend, you can enjoy that smug satisfaction from the "oooh's" and "ahh's" as you made a cake which...


*cough*...took you hours, which you slaved over, and was impossibly hard...*cough*


They do not have to know how simple it was!
That can be our little secret!


So go on everyone, make your own "Corr Blimey" Cake! Embrace the adoration and get stuck in to a cake which not only makes your mouth water, but will pop the whole crowds eyes in delight!

  3. Mmm yummy! I made a similar cake for a friends birthday but used alternating white and milk chocolate fingers and sprayed the white ones gold with special spray! A cake always has to have some sort of chocolate and berry combination to look that amazing I think!

  5. I did something similar to this for my boyfriend's birthday, except I used Kitkats (chocolate fingers are a better idea) and piled the top with M&Ms, smarties and skittles xxx
