Skinny Summers Skewers

Now apparently we are in the middle of Summer, (except at the moment the weather would have you believe that it has not yet even hit Spring!)
But this rather puzzling weather mishap doesn't mean that the Summer spirit has to suffer!

As you might have seen from some of my other recipes, I've been trying to create some delicious, filling recipes that won't harm the dream of achieving that perfect beach body.
Of course one of the main priorities is to do so, but to still lock in taste and pack a punch of flavour.
Queue my 'Skinny Summer Skewers' to save the day!

Packed full of taste, texture, and nutrients, these skewers are perfect for a light lunch or even char-grilled on a BBQ.
Golden, mustard coated chicken stacked next to an array of flavoursome vegetables. You can't get much healthier than these bad boys!

For my skewers I used:
- 100g of good quality chicken breast fillet
- 2tsp Wholegrain mustard
- 1/2 a large courgette
- 1 large red onion
- 1 large red/yellow pepper
- 1/2 a large aubergine
- A couple of cherry tomatoes

Of course if you have any mushrooms, spring onions, or anything else lying around in the fridge that needs eating up, then this recipe is great for using them all up!

First of all, soak 5 or 6 wooden skewers in water for 20 minutes or so.
Preheat your oven to 200C or 180 fan.

Slice up your chicken into chunks and add to a bowl with 2 tsps of mustard.

Add a good squeeze of lemon juice and give the chicken a stir to coat completely.

Slice up your aubergine, courgettes, tomatoes, and onion.

Now get skewering in what ever combination you fancy! I found that for five skewers I had to limit each one to 3 pieces of chicken as the vegetable ratio is a lot higher.

Pop a griddle pan (or a regular large frying pan) onto a high heat to warm up. Add a good few squirts of 0 Calorie Spray or a light drizzle of oil before adding the skewers to the pan.
(But obviously this could be done on a Summer BBQ too.)
Yummmm char-grilled chicken!

Cook on the grill for about 10 minutes, turning the skewers over half way through.

Slide into the oven for a further 4/5 minutes just to make sure the chicken is cooked the whole way through, and hey presto, these babies are done!

Packed full of nutrients, lean protein, and vitamins, you really can not get much healthier than these!
I served mine along side some spinach, a big dollop of half fat creme fraiche, and a drizzle of sweet chilli sauce.

The weather might have other plans, but if Summer won't come to us, we will just have to bring in the Summer spirit ourselves!
Indoor BBQ style it is!

  4. Looks lovely Emily!! I love skewers like this - grilled veggies are the nicest. Also, I spy that your parents have an aga too? I love love love Agas. I'd sooner have an Aga than a car. One day!


    1. Aww thanks Flora! Grilled veggies are just unbeatable, especially with chicken or halloumi! Oh I'm the same, a car can get you places but an Aga solves every issue! Can't wait to have my own!
      (Oh and I'm addicted to the White Queen too!)
