Hot Diggety Dogs

Man cannot live on cake alone.
One can damn well try...but even a complete bake-aholic like myself needs more sustenance than carrot cake and brownies.
With the weather turning icy, comfort food is becoming more of a necessity than a pleasure, so when I found this recipe on BBC Good Food I could not resist giving it a go.

Hot Diggety Dogs?!
I hear you cry...What on earth is that?!
Well, it is pure, flavoursome bliss to fill that gaping void in your stomach!
That's exactly what it is.

All you will need to make 6 of these scrumptious wraps is:
- A pack of large pork sausages
- 2 tbsp sunflower oil
- 1 large onion, sliced
- 3 tbsp wholegrain mustard
- 6 large tortilla wraps
(Lots and lots of ketchup, tomato relish, brown sauce or anything else that tickles your fancy to serve.)

Preheat your oven to 200C or 180 fan, drizzle the oil in a large baking tray and slide into the oven for a few minutes to heat up.

Add the sausages to the hot tin and roast for 10 minutes.

Thinly slice up the onion and after the ten minutes, take the sausages out of the oven. Push the sausages to the outside of the pan and place the onions and mustard into the middle.
Give it a good sprinkling of salt and pepper too.

Shake the pan left, right and side to side to coat the onions and sausages in as much flavour as possible.

Then slide back into the oven for 10-15 minutes until the onions are golden brown and the sausages are cooked through.

Warm up some tortilla wraps in the microwave or in the bottom of the oven and dollop on a thick layer of your chosen sauce.
(There is a reason I was nicknamed 'The Ketchup Queen' by my grandmother when I was a tot!)

Get a good spoonful of onions and sausages and roll up within the tortilla.

Serve the wraps in tinfoil, napkins or parchment to stop any dangerous dribbles, and then... devour!
If this isn't pure, perfect comfort food then I do not know what is.

It's a cheeky twist on a sausage sandwich and one well worth a try on a cold winters day, especially for a portable wrap on the go!

And yes, I was that cool kid walking to my lecture with a sausage in my mouth for half of the journey. But just remember to wrap it up in tinfoil- ketchup stains are never attractive, (but the taste was worth the embarrassment!)
