White Chocolate & Granola Cookies

I think I've done rather well to avoid procrasti-baking for this long.
The essays are (there are no other words), hell, and my motivation is slowly dying along with my social life.
But it isn't all doom & gloom as the end, holidays and a social life are in sight.

Anyway, to stop me from going crazy, I made these little beauties this week to smuggle into the library for constant pick-me-ups.

Smooth white chocolate and crunchy granola cookies. Just perfect.
The brilliant thing about these too is that they aren't heavy, you can eat a million and the smell when they come out of the oven is second to none.
Dead quick, pretty cheap to make and mind boggling-ly simple. (My favourite sort of baking!)

To make your own White Chocolate & Granola Cookies, you will need:

- 460g plain flour
- 1tsp bicarbonate of soda
- 1/2 tsp salt
- 230g butter, softened
- 230g soft light brown sugar
- 1 egg
- 1 tsp vanilla extract
- 230g granola
- 150g white chocolate, chopped up into chunks

Preheat your oven to 180C/160 fan and line two baking trays with parchment.

Sift together the flour, bicarbonate of soda and salt. Pop it in a bowl to one side.
In another large bowl, cream the butter and sugar together until thick, then add the eggs and the vanilla extract.

Beat well and gradually add the flour until a thick dough forms.

Then just mix in the white chocolate and granola.

Grab a dessert spoon and space out dollops of the dough onto the baking sheets.

Bake in the oven for about 9-10 mins until golden around the edges.

And that, my friends, is it.
Ridiculously simple and quick: cookies within 20 minutes.

Trust me, these when warm.... Gahhh. Utterly drool worthy!
I hope everyone else isn't too swamped under with work.

  3. I feel you on the procrasti-baking! I'm recovering, but my first instinct when faced with a ridiculously huge, stressful workload is to bake, even when I know I won't have enough time to get everything done, let alone make cookies! I'm glad you decided to do so, though - these look awesome!
