Two Years Of Blogging

Today, I have been blogging for two years...

(How on earth have I been blogging for two years?!)

I feel crazy typing that.




It's barmy how quickly time flies, how much I've gotten out of this blog, and how much I hope others have too. These past two years have been an absolute blast and I want to thank everyone that's read my little slice of the internet, commented, or just helped me in some way or another.

A big, big thank you!


This blog is going to change a lot in the next year, I'm hoping in a very positive way.

So, hear's to the new year and everything to follow!


But what's a birthday without a cake?!

Well, New Years Day is not only my blog's birthday, but it is also my Mum's and so I whipped up her favourite bake as a thank you for being so amazing.


 This Coffee & Walnut cake is a classic. Moist, nutty & flavoursome, it's timeless and one of my go-to bakes.

To make your own Coffee & Walnut cake, you will need:

- 225g self raising flour

- 225g unsalted butter or margarine, softened

- 225g caster sugar

- 4 large eggs

- 1tsp baking powder

- 2 tbsp instant coffee, dissolved in 1tbsp hot water

- 100g walnuts, chopped

(For the icing)

- 75g butter

- 300g icing sugar

- 2tsp instant coffee, dissolved in 2 tbsp hot water


Preheat your oven to 160C/140 fan and line two sandwich tins with baking parchment.


Measure out all of the ingredients into a large mixing bowl.





 Beat well until evenly blended and thick.


Spoon the batter evenly into the two sandwich tins and bake in the oven for 30-35 minutes until risen, golden, and shrinking away from the sides.


Once the cake has cooled down completely, beat together the icing sugar, butter, and coffee to make the butter cream. (If needs be, add a touch more icing sugar to thicken or a tad more coffee for a stronger flavour.)


You can either leave the cake a simple two layers (which I usually do), or go a bit fancier and cut both of the layers in half. If you are doing so, just use a big knife to cut about 1cm around the cake before going deeper.

Smother butter cream in between each layer, pushing to all of the sides, and decorate the top with crumbled walnuts. (The best way is to beat the nuts in a sandwich bag with a rolling pin.)


Serve with a steaming cup of tea, huddled on the sofa, and in the warm and dry.

A proper comfort food, classic cake.
