Bed in Breakfast: Speculoos Croissants

It's a big day tomorrow!!

Well, yes. It might be Valentines Day... but it's also my 21st birthday.

So I'll be spending most of this weekend with my nearest and dearest, having plenty of champagne and getting fat on my favourite foods. The dream.

But, it is Valentines Day, and I thought I'd add a simple, cheap recipe that's a little bit different from the normal heart related cakes.

Ever since my university ski trip, I'm addicted to Lotus (speculoos) spread. 
It's beautiful. 
I could happily eat it smothered on anything and everything. So, what's better than just eating Lotus spread by the spoonful? Putting it in croissants with chocolate of course!
Perfect for a Valentines Day breakfast in bed.

Team with some fresh fruit and hot coffee and you are onto a winner.

To make your own 'Speculoos Croissants', you will need:

- 1 pack of jus roll croissant dough
- 1 pot Lotus Spread (crunchy or smooth)
- 75g milk chocolate

Preheat your oven to 200C/180 fan and pop some parchment onto a baking sheet.
Open up the croissant dough and roll out as described by the instructions.

Separate each of the triangle and spread out a big spoonful of speculoos.

Add on two squares of chocolate onto the long side of the triangle.

Roll up the triangle (long to short) and place each croissant onto the baking tray.

Bake in the oven for about 10-15 minutes until golden, and then... Devour!!
