My Ultimate Cookie Recipe


There hasn't been a recipe in a while, has there?
Oops!
Don't get me wrong; it's not like I haven't raided my baking cabinet dry recently, just more the fact that when I have baked, it's been my go-to recipes instead of experimenting. (I'm talking the home comforts of Banana Breads, Gin & Tonic Cake & Brownies...)

So to kick start my baking come back, I thought I'd give you something classic. Something you can mix & match & chuck whatever the heck your favourite chocolate is into.
My Faultless, Ultimate Cookie Recipe.


Yep. Fill these bad boys with whatever your heart desires. 
I usually pick Terrys' Chocolate Orange, Smarties or just tons of milk chocolate, but go mental.


To make my Ultimate Cookie Recipe, you will need:

- 250g unsalted butter, at room temperature
-300g light brown sugar
- 2 large eggs
- Splash of vanilla extract
- 375g plain flour
- 1tsp baking powder
- 1 tsp salt
- 200g chocolate of choice, broken up


Preheat the oven to 180C/160 fan & line two baking trays with parchment.

Beat together the butter and sugar until smooth. Scrape down the sides and add the eggs one at a time, giving a quick beat to combine in between. 


Add the vanilla extract & baking powder.


And finally tip in the flour & salt before beating it all together.


Stir in your chocolate of choice.


Lastly, spoon out tablespoons of dough onto a baking sheet with plenty of space in between.
Slide into the oven for 10-12 minutes depending on how soft you like them, until golden brown. (I always do 10).


And hey presto...
There you go. A big old batch of foolproof cookies to nibble away on.
